Easy and Delicious Chicken Tacos
Recipes that are super easy, quick and healthy are my JAM! And…. drumroll please… I came up with this one totally on the fly and used ingredients I had left over in my fridge! Let’s just say, that sh*t never happens and yes, I am proud of myself.
I used an instant pot and a skillet for this recipe. Make these on Taco Tuesday or when you just want something easy and delicious.
Ingredients:
2 Chicken Breast
1-2 packets of Siete Taco Seasoning
Corn Tortillas
Black Beans
Roma Tomatoes
Avocado
Cheese
Limes
Directions:
Place chicken breasts in the instant pot with a little bit of water; do not season! I usually use the 15 minute cooking option but for this I used the 40 minute (I was multitasking… and really it doesn’t matter, as long as the chicken is cooked. TIP - the chicken should fall apart when you pick it up).
While the chicken cooks, prep your beans (rinse and set aside), dice your tomatoes, avocado and limes.
Once the chicken is cooked, transfer to a medium bowl and shred. Place the shredded chicken into your skillet.
Empty your packet(s) of Siete Taco Seasoning over your chicken that’s in the skillet (I used two packets of Siete because I had 2.5 lbs of chicken). Drizzle enough water into the pan so the seasoning evenly coats the chicken. Allow the mixture to come to a light simmer for about 5 minutes then pull from the heat.
Take your corn tortillas (however many you need), either lightly heat them on the stove or wrap them in a wet paper towel and place them in the microwave for 30-60 seconds. TIP: If you have a gas stove, I LOVE to gently heat the tortilla using a low flame on a burner.
NOW, LET’S BUILD THOSE TACOS!!
Plate your tortilla(s); sprinkle with cheese. Add a little chicken, and the ingredients you prepped as “toppings.” Grab a few lime wedges to squeeze on your tacos.
Bing, bang, boom! You’ve got chicken tacos. ENJOY!
